Farro Medio, aka Emmer, is the second grain to be domesticated from the fertile crescent.   It is the ancient genetic basis for brittleness and elasticity in modern wheat grains. It is a more direct ascendant of durum wheat and hence is ideal for the manufacture of extruded pasta in all of its forms.   Like Einkorn, Emmer has an extensive root system that is able to extract a wide diversity of minerals, nutrients, and bacteria from the earth, thus delivering a string robust flavor not found in modern grains. We mill a variety of Emmer known as Blue Tinge Ethiopian Emmer, Eastern Africa is the cradle of colored wheat grains.  This emmer has a deep blue hue which imparts a uniquely robust malty, spicy, and mildly tannic flavor.
